Luke's Favorite Fish Taco Recipes
Ingredients:
Simply Organic Fish Taco Seasoning
1 lb of cod or halibut
2 tbsp. of olive oil
1 lime
Tortillas
Follow the directions on the seasoning package. Cut fish into half inch long strips. Place fish in a glass bowl and coat with olive oil. Add taco marinade and coat fish again. Grill fish while coating with the marinade for a few minutes on each side until fully cooked. Squeeze one large lime on fish before serving. Use organic corn tortillas or Ezekiel sprouted tortillas.
Chicken or Fish Masala
Ingredients:
Trader Joe's Masala sauce
One pound of either chicken or fish
8 oz. of organic or fresh cut vegetables
Naan Bread
Organic Brown Rice
Cut chicken or fish into one inch cubes and place in a large frying pan. Add jar of masala mix and 1/4 of the jar of water. Add veggies and cook for 10-15 minutes. If you are cooking the chicken, check to make sure the inside is cooked thoroughly. Serve over cooked brown rice and with naan bread. You can buy naan bread in the bread section or some grocers carry it in the frozen section. Luke's favorite is Trader Joe's frozen naan bread.
Nonna's Green Gnocchi
This recipe is adapted from Luke's Nonna who has made gnocchi for Luke since he could eat solid food. Luke wanted to pay tribute to his grandparents who are from Italy by making a gnocchi recipe that was red, white, and green - the colors of the Italian flag.
Ingredients:
5 cups Organic white flour
1 pound of Organic swiss chard
Salt
Sauce or Butter
Boil 1 1/2 cups of water with 1 pound of swiss chard and 1/2 tsp of salt for 7-10 minutes. Put entire contents into a blender a little bit at a time and blend.
In a separate bowl, place 5 cups of flour and blend in spinach mixture very well - the best way is to use a KitchenAid. Take a little dough at a time and roll out on a hard surface or board. The pieces should be roughly 3/4" diameter and between 1- 1/2 feet long. Cut into 1" pieces. Push the center with your thumb and let it roll over the top of your thumb.
Boil water with a tablespoon of salt and cook the pasta for roughly 5 minutes. Add sauce or butter on top. Luke likes his with tomato sauce.
Luke's Lemonade Recipe
One Gallon Container
1/4 bottle of Santa Cruz Organic Lemon Juice
Fill the rest of the container with water - ours is filtered
Add some stevia to sweeten it. We use the liquid kind for lemonade. You can freeze this and make frozen lemonade.
Luke's Smoothie Recipe
Organic Rice Milk*
Frozen organic blueberries
Frozen organic strawberries
Fresh organic peaches from my tree
Ice
Stevia
Blend and serve. You can also freeze this one and make frozen smoothies.

Ezekiel Pizza
Ingredients:
Ezekiel Sprouted English Muffins
Organic Tomato Sauce, organic pizza sauce, or organic hummus
Grated Goat Cheese
Preheat oven to 350 degrees.
Slice English muffin in half and top with desired amount of pizza sauce and goat cheese. You can add veggies or grind some up and put them in the sauce. Another variety we enjoy is to put a thin layer of hummus in place of the tomato sauce and top with goat feta cheese.
Put them in the oven for five minutes and enjoy!
Tip: Since Ezekiel products do not contain preservatives, we put them in the freezer and just pull out the amount needed.
Quesadillas or Grilled Cheese
Ingredients:
Ezekiel Sprouted Tortillas (regular of gluten free) or Ezekiel sprouted bread.
Grated Goat cheese
Remove tortilla from freezer and place in a pan. Grate goat cheese and put on half of the tortilla. As tortilla warms, fold in half. After a minute, flip tortilla and warm from the other side. This is a quick and easy snack or lunch.
For variety, add chicken chunks or veggies. You can serve with organic salsa, sour cream, guacamole, and other condiments your child enjoys.
If you are making the grilled cheese, slice or grate the cheese onto the bread and cook like you would a regular grilled cheese sandwich. Instead of butter, Mark prefers placing coconut oil in the pan and cooking the grilled cheese that way. He also likes sing ghee which is clarified butter and does not contain casein.
"Soda" and "Flavored fruit punch"
Ingredients:
Mineral Water or Plain Water
Flavored Stevita stevia
For soda, put desired amount of flavored Stevita stevia in a glass and add cold mineral water and stir. You can also pre-make an entire bottle of soda by adding the Stevita stevia directly into a liter bottle of mineral water. Be sure to close quickly, otherwise the contents will overflow. Shake the bottle and put back in the refrigerator for 12 hours. Now it's ready whenever you need it.
For Flavored fruit punch, add desired amount of flavored Stevita stevia in a glass and add cold water. This can be pre-made by putting Stevita stevia in a container, add water and stir. This and the English muffin pizzas are a big hit at parties - kids love making it themselves!
