Baked Apple French Toast - serves 3-4

Make a great brunch meal that kids love! In a skillet, add:
3 Cups Sliced Apples - fuji, granny smith, braeburn and 1/2 Cup Maple Syrup. Sauté for 10-15 minutes, until apples are almost cooked through.
In a Bowl, mix with a whisk the following:
1/2 Cup Milk or Rice Milk
3 Eggs
1 teaspoon Vanilla
1/4 teaspoon Cinnamon

In an 8" x 8" glass pan, layer in order the following:
1/2 of the Sauted Apples from above
One Piece at a time, dip 3 pieces Gluten Free Cinnamon Raisin Bread (we like Food For Life - Cinnamon Pecan bread) in egg mixture and using tongs, lay over apples so it's 1 even layer.
On top, put: Other 1/2 of Apple/Maple Syrup Mixture
One Piece at a time, dip 3 pieces Bread in egg mixture and using tongs, lay over apples so it's 1 even layer.
Pour remaining Egg Mixture over the top of the bread.
Let sit for 20 minutes.

To cook:
Preheat oven to 375 degrees. Cover pan with foil or parchment paper. Cook French toast, covered, for 15 minutes. Uncover and cook for another 20 minutes, until top is crispy. Serve with sausage links.

Why Gluten Free?
After struggling for 10 years with stomach ailments, seeing plenty of doctors, trying many types of diets and having a range of tests done, I decided to try a gluten free diet. I felt slightly better right away, and continued to improve from there. After about one week, I felt a lot better and was starting to feel somewhat 'normal' again. Since I had spent the last few years with a heating pad on my stomach every night to ease the pain, I was thrilled to feel like I was finally overcoming this! These days I don't even want to eat foods containing gluten- it's simply not worth it because of the pain it causes me!

Once I started researching gluten free diets, I started to become aware of how important it is for so many people. From Celiac disease to Autistic children to gluten intolerant people, eating gluten free is very important for a lot of people and I knew I wanted to make it easier. I was in the middle of getting Healthy Creations open and decided to try and make as many meals gluten free as possible. And we have done that. Every item we offer has a gluten free alternative available. If there is something we can't find/order, we make it ourselves. We have had gluten free manicotti and ravioli (we made the manicotti shells and ravioli from scratch) and now we are making our own gluten free pizza crusts. Everyday we get people in that are so excited to finally have gluten free convenience foods that are healthy too! We are so excited to offer these choices and hope to spread the word about gluten free.
