This recipe is adapted from Luke's Nonna who has made gnocchi for Luke since he could eat solid food. Luke wanted to pay tribute to his grandparents who are from Italy by making a gnocchi recipe that was red, white, and green - the colors of the Italian flag.
Ingredients:
5 cups Organic white flour
1 pound of Organic swiss chard
Salt
Sauce or Butter
Procedure:
Boil 1 1/2 cups of water with 1 pound of swiss chard and 1/2 tsp of salt for 7-10 minutes. Put entire contents into a blender a little bit at a time and blend.
In a separate bowl, place 5 cups of flour and blend in spinach mixture very well - the best way is to use a KitchenAid. Take a little dough at a time and roll out on a hard surface or board. The pieces should be roughly 3/4" diameter and between 1- 1/2 feet long. Cut into 1" pieces. Push the center with your thumb and let it roll over the top of your thumb.
Boil water with a tablespoon of salt and cook the pasta for roughly 5 minutes. Add sauce or butter on top. Luke likes his with tomato sauce.
