Fresh Potato Fries

12 ounces baking potatoes, about 2 medium
1/4 teaspoon salt
Canola oil spray

Procedure:
1. Wash and scrub potatoes. Cut potatoes into french fry strips.
2. Place potatoes in steamer basket and steam over boiling water for 3 minutes.
3. Spread potatoes on a cookie sheet sprayed with canola oil spray and sprinkle with salt.
4. Bake potatoes at 350° until ends begin to brown, approximately 20 minutes.

Makes 4 servings, each containing approximately:
65 calories
14 gm. carbohydrate
Trace fat
0 mg. cholesterol
2 gm. protein
106 mg. sodium
2 gm. fiber

Sometimes you just want French Fries. But how much better it is to feel good about eating them because they are not deep fried and you know just how they're made. These oven-baked "fries" can be as crispy as you want to cook them. You can also vary their size and shape according to your preference from steak fries to shoestring. Do weigh the potatoes you start with though, and realize that 12 ounces turn into 4 of our portions. As with other starchy side dishes, portion control is the key.
