Turkey Meatloaf

1 1/2 pounds ground turkey breast
1 whole egg
2/3 cup minced onion
1/3 cup minced red bell pepper
1/2 cup ketchup
2 tablespoons Worcestershire sauce
1/2 teaspoon chopped, fresh basil
2 tablespoons olive oil
1 teaspoon salt
1/2 cup Panko bread crumbs
1/4 teaspoon black pepper

Procedure:
1. Preheat oven to 375°. Lightly coat a 4 x 8-inch bread pan with canola oil.
2. Combine all ingredients in a large bowl and mix well. Shape into a loaf and place in pan.
3. Bake for 45 minutes or until turkey is cooked through. Cool slightly and slice into 6 equal portions.

Makes 6 servings, each containing approximately:
245 calories
8 gm. carbohydrate
7 gm. fat
147 mg. cholesterol
36 gm. protein
581 mg. sodium
Trace fiber

Serving Suggestion:
1 slice turkey meatloaf
1/2 cup scallion mashed potatoes
1/2 cup steamed green beans
